Sweet Potato Fries/Chips

Ingredients:
  • 3 sweet potatoes
  • 1/4 C Olive Oil
  • 1 tbs Garlic Powder
  • 1 tbs Chili Powder
  • 1 tsp Ground Cayenne Pepper
  • 1 tsp Salt

Preheat oven to 450 degrees.
Peel sweet potato and feed through food processor using the slicing blade. This creates uniform round slices of the potato.
Toss in a large mixing bowl with the oil. Finally, mix in dry ingredients. Toss them together until the sweet potato slices are evenly coated.
Place on cookie sheets side by side.

Bake for 20 minutes. Flip and bake for another 30 minutes at the reduced temperature of 350 degrees. To make crispier: flip again in the middle of the last 30 minutes of baking.

VERY time consuming but SO delicious :)

Banana Peanut Butter TWIST!



Ingredients:
  • 1 banana
  • 1/2 c. Peanut butter
  • 10-15 Carrob Chips

Dice bananas to desired thickness and organized on a plate. Spoon desired amount of Peanut Butter on each slice of bananas. Top with 1-2 Carrob Chips on each mound of peanut butter.

Refrigerate for a couple minutes- especially if you are using all natural peanut butter, as it tends to be very runny and messy.

Both of my girls LOVE these :)

Vegan Toll House Cookie- Deep Dish

 















Ingredients:
  • 2 1/4 cups whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup Earth's Balance Butter
  • 3/4 cup organic evaporated cane juice sugar
  • 3/4 cup packed organic brown sugar
  • 1 teaspoon vanilla extract
  • 3 tsp Ener G Egg replacer + 4 tbsp water
  • 2 cups Carrob Chips or all natural dark chocolate chips
  • 1 cup chopped nuts
PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add Ener G. Gradually beat in flour mixture. Stir in Carrob Chips and nuts. Dump  mixture into 9 in round baking dish. Pack down.

BAKE for 30 minutes or until golden brown. Cool. 

*The Toll House Recipe says 9-11 minutes but I found that this is not even close to accurate for this altered recipe*


**I basically just took the original Toll House Cookie Recipe and replaced them with healthier alternatives that were animal free**
